Thai Rice Dumplings in a sweet coconut soup

Method:

Using a mixing bowl, mix the  riceflour with water to make a stiff dough. Knead it well and roll the dough between your hands  into small balls.

In a small saucepan, bring 200ml water and sugar to a boil. Toss in the rice flour balls and simmer gently until they’re cooked (they will float to the surface when cooked). Add coconut cream to the soup and stir gently.

Add a little salt and more sugar if needed to taste.

Remove with a slotted spoon or sieve

Add the coconut soup

.Serve in individual bowls
