You will need oil and sugar and meat either pork,chicken or prawns
- Peel and chop the carrot. Cut the meat into slices
- In a sauce pan fry 1tbsp oil with the curry paste and cook a little. Add a little coconut milk and fry until the paste cooks out a bit approx 2 mins
- Add chicken and seal the meat.
- Add the rest of the coconut milk,sliced carrot, lime leaves and a little water and simmer, until chicken is cooked. Add basil. Cook a few more minutes
- Add fish sauce and sugar to taste
